Organicisms Béchamel Spinach and Macaroni

8 ounces Organicism Organic Spinach
12 ounces macaroni
5 Tablespoons butter
1 Tablespoon olive oil
1 Tablespoon all purpose flour
1 cup milk
¾ cup gruyere cheese
Salt
Preheat oven to 350º
Cook Macaroni accordng to package directions and set aside.
Add spinach to a large pot of boiling water. Bring back to a boil, lower and cook for about 10 minutes. Drain well and coarsely chop.
Set aside
To make béchamel; melt 2 Tablespoon butter with olive oil in a pan.
Stir in flour and cook, stirring constantly for 2- 3 minutes. (do not let the flour brown) Slowly stir in milk and season with salt. Cook over low heat, stirring constantly for 5 minutes.
Melt remaining butter in another pan, add spinach, and toss well.
Spoon spinach into a deep baking dish, spreading it out evenly.
Mix cooked macaroni with half the cheese and pour atop the spinach.
Pour bechamel sauce on top of macaroni and sprinkle wth remaining cheese.
Bake for 15-20 minutes until golden brown and bubbly. Enjoy!
