Next time I will: bring a cooler, last time we were on our way to vineyard tour and had no way of protecting all the fresh goodies we wanted to buy from the sun
Recipe Inspiration: stone fruits-nectarines
Nectarine Cobbler
4 T. unsalted butter, softened
½ c sugar
1/8 c egg beaters
½ c all purpose flour
¼ t baking powder
5 c. fresh nectarine slices
1T. cornstarch
½ c fruit juice ( my favorite-ceres youngberry)
Preheat oven to 375º
In bowl of mixer, beat butter and sugar until fluffy, add egg beater and beat until light. Add flour and baking powder and beat until well combined.
In a large bowl combine fruit juice, cornstarch, and fresh fruit. Pour into baking dish, dot fruit with cobbler batter.
Bake for 40-50 minutes or until top is brown and fruit bubbly.
